Why these sides matter. Raita is not a garnish — the casein in yogurt binds chilli heat the way water never will, which is why a bowl beside a spicy main changes the whole meal. Our curd is set in-house every morning from full-fat milk and cultured slowly overnight, the same batch that makes our lassi; mix raita gets cucumber, onion, tomato and roasted cumin, while boondi raita folds in fried gram-flour pearls for a softer, milder bowl. The kachumber-style green salad comes undressed with a lime wedge (squeeze it over the onion before eating), and papad is flame-roasted to order. Every biryani already includes raita at no charge; these are for topping up a paratha order or building a fuller spread around curry and rice.
