How we do chaat. The crisp parts (papdi, samosa shells, sev) are fried in the morning; the wet parts (yogurt, tamarind chutney, mint chutney) live in the cold station — and the two only meet when you order, because assembled chaat dies in minutes. Samosas are hand-folded, not frozen. The chutneys are made in-house: tamarind cooked down with jaggery, mint blitzed with coriander and green chilli. Eat these plates the moment they land — that first crunch is the whole point.
