Notes from the kitchen — Naan Bombs
A note on the Naan Bombs. The method is the point: the dough goes right around a full filling rather than being folded over it, and the parcel is charcoal-baked in the tandoor until the outside blisters while the inside is still molten. Each one is rolled and stuffed after the order comes in — they do not survive being held in a warmer, so they are baked to order and sent straight out, and they are meant to be eaten hot.

Rice is the one thing not included; add a portion if you want to turn it into a full meal.
Which flavours are there, and which are vegetarian?
There are 6 flavours: three chicken — butter chicken, kadai chicken, tawa chicken — and three paneer — paneer bhurji, paneer butter masala, kadai paneer. The three paneer bombs are 100% vegetarian. All chicken is halal-marked, there is no pork in the kitchen and no alcohol in any cooking.
How spicy are they?
Three are mild — butter chicken, paneer bhurji and paneer butter masala, and three are medium — kadai chicken, kadai paneer and tawa chicken. Say mild or hot when you order and both the filling and the curry are adjusted — the masala goes in fresh rather than coming out of a sauce.
