About Pani Puri (10 pcs)

Pani puri is the most theatrical of all North Indian street chaats, a snack you build and eat one piece at a time. The name says what it is: pani, the spiced water, and puri, the hollow fried shell that holds it. Across India it travels under several names, but the idea is constant everywhere, a brittle sphere filled at the last second so it shatters with a rush of cool, sour, spiced liquid the moment it goes in.

At BHARAT the shells are crisp rounds of semolina, kept sealed until serving so they stay brittle. The pani is a tangy mint and coriander water sharpened with green chilli and black salt, and it is balanced by a sweet tamarind chutney, with boiled potato and chickpea as the stuffing. The mint water and the masalas behind it are made fresh in our kitchen by our chef from Uttarakhand, and the dish is vegetarian with no pork or meat product.

A portion is ten shells, and it arrives deconstructed by design, the shells, fillings, and two waters kept apart so nothing turns soggy before you are ready. You tap a hole in the top of a puri, spoon in potato and chickpea, dip it full of the spiced water, and eat the whole thing in one go before it can leak. The pani sits firmly at the hot end of our menu, the sharpest and most refreshing way to open a meal, and unlike our fried starters its appeal is in the cold burst rather than the crunch alone.
