Masala papad is the snack that turns a humble lentil wafer into a proper starter — the crisp, tangy, colourful plate that lands on Indian tables the moment people sit down with a drink. It takes the plain roasted papad and crowns it with a fresh, zingy salad topping, giving you the satisfying snap of the wafer together with the crunch and acidity of raw vegetables and chaat masala. It is one of the most popular things to order over a beer or a lassi while you decide on the rest of the meal.
We start with two papads — thin wafers made from urad (black gram) lentil flour — roasted briefly over an open flame until they puff and blister, with no oil. They are then topped at the last moment with finely chopped onion, tomato, cucumber and green chilli, a scatter of fresh coriander, a generous sprinkle of tangy chaat masala and a squeeze of lime. The contrast is the whole appeal: hot, crisp, smoky papad under a cool, sharp, salty-sour topping.
Because the topping is fresh and wet, masala papad is meant to be eaten straight away — leave it more than a few minutes and the papad begins to soften under the vegetables, losing the crunch that makes it work.
