The spring roll on an Indian menu belongs to the Indo-Chinese tradition, a cooking style born in the Chinese communities of Kolkata that has since become its own branch of Indian street and restaurant food. It borrows the form of the East Asian roll but tunes the seasoning to Indian taste, leaning on soy, vinegar, ginger, and garlic for a savoury, slightly sharp filling. It is the one item in our starter section that sits outside the classical North Indian repertoire, and it offers a lighter, vegetable-forward change of pace.

At BHARAT the filling is stir-fried fresh to order: shredded cabbage and carrot with bean sprout and spring onion, tossed quickly over high heat so the vegetables keep some bite rather than turning soft. That mixture is wrapped in thin refined-wheat wrappers and deep-fried until the surface blisters and turns crisp and golden. The dish is vegetarian, with no pork or meat product, and our masalas and aromatics are prepared in-house by our chef from Uttarakhand.

A serving is six rolls, cut and stacked so they are easy to share, and they are at their crispest straight out of the fryer. We send them with a red chilli sauce for heat and a sweet, tangy plum-style dip for balance, letting you swing between the two. Among our starters they are the mildest option, which makes them an easy choice for the table when other dishes run hotter, and a good opener before the richer North Indian plates arrive.
