About Roasted Papad (2 pcs)
Roasted papad is the lightest item on the entire menu and one of the oldest accompaniments of the Indian table — a thin, crisp lentil wafer cooked with no oil at all, served as the simple, virtuous counterpart to the heavier dishes around it. Papad has been part of Indian eating for centuries, sun-dried in homes and then crisped just before the meal, and the roasted version keeps that tradition in its purest form.
Ours are made from urad (black gram) lentil flour, rolled wafer-thin. We hold each one over an open flame for roughly ten seconds a side, turning until it puffs, blisters and develops a few dark freckles but never blackens or turns bitter. Nothing is added — no oil, no toppings, no salt beyond what is already worked into the wafer — so what you get is pure, clean crunch with a faint smoky note from the flame. Two pieces come per portion.
The appeal of roasted papad is its restraint. Because it is oil-free it is the lightest possible nibble to start a meal or to keep alongside it, and it doubles as an edible scoop for raita, pickle or a little curry. Many of our regulars order it simply to crumble over a plate of biryani or dal for added texture. Naturally gluten-free and vegan, it is a world apart from our fry papad, which is deep-fried, richer and crunchier — and from masala papad, which is loaded with a fresh salad topping.
