About Mix Raita
Mix raita is the all-purpose cooling side of the North Indian table — a bowl of seasoned yogurt studded with fresh vegetables that does the essential job of balancing heat and richness across the rest of your meal. Raita in some form accompanies almost every North Indian spread, and the mixed-vegetable version is the most versatile of them all, equally at home next to a fiery curry, a plate of biryani or a stack of parathas.
We build ours on the whole-milk yogurt set in our kitchen each morning, whisked smooth and then folded with finely diced cucumber, raw onion and tomato and a handful of chopped fresh coriander. It is seasoned the traditional way, with roasted cumin and black salt, which give it a savoury, faintly smoky depth rather than any sweetness. The vegetables keep a little crunch against the cool, creamy yogurt, and the bowl is served chilled.
There is real science to why raita works alongside spicy food: the casein in yogurt binds and carries away capsaicin, the compound responsible for chilli heat, so a spoonful of raita genuinely soothes the palate in a way that water cannot. That makes mix raita the natural partner for our hotter dishes and for any biryani, where a little spooned over the rice tempers the spice without dulling the flavour. Where our boondi raita is softer and milder, mix raita is fresher and more savoury, with the bite of raw onion and the lift of coriander.
