About Chicken Chilli Wings

Chicken Chilli Wings sit firmly in the Indo-Chinese tradition, the hybrid cooking style developed by the Hakka Chinese community of Kolkata. Like the rest of this family of dishes, it is neither authentic North Indian nor truly Chinese, but its own thing born from one community adapting Chinese methods to Indian flavours.

We use split wings, the flats and drumettes separated so they are easier to eat and the sauce reaches every surface. Each piece gets a very thin cornflour coating, is marinated in ginger-garlic and soy, then fried until the skin crisps before being tossed in a chilli-soy sauce and finished with sesame seeds. A portion is six wings. The chicken is halal-marked and bought fresh from Makro each day, the sauce is made in-house by our chef from Uttarakhand, and there is no pork or alcohol anywhere in the dish, keeping it halal-friendly. Everything is cooked fresh in a hot wok when you order.

These run hot, with both chilli paste and fresh chopped green chillies in the sauce, though the kitchen can tone the heat down if you ask. The flavour is savoury, tangy and spicy rather than sweet, so this is not a sweet American BBQ-style wing. They come out sticky and drier than our Chilli Chicken, and they are meant to be eaten with your fingers, so we will bring wet wipes to the table. They make a good starter to share over drinks, with rice or noodles alongside.
