About Chicken Curry
Chicken curry in the North Indian sense is the plain, reliable gravy that sits at the centre of an ordinary meal rather than a special one. There is no single recipe behind it; it is the curry cooked in Punjabi households on a normal day, built from onions, tomatoes, and whatever ground spices are in the kitchen.

Bone-in halal chicken is simmered in an onion-tomato gravy with ginger and garlic, turmeric, ground coriander, and garam masala, the bone left in because it gives the broth more depth as it cooks.
