About Chicken Lollipop

Chicken Lollipop is a Calcutta Indo-Chinese classic, born from the Hakka Chinese kitchens of Kolkata rather than from North Indian or genuinely Chinese cooking. The name comes from the shape: a chicken wing is 'frenched', meaning the meat is cut loose and pushed down to gather in a ball at one end of the bone, giving you a neat handle to hold while you eat.

At BHARAT each lollipop is marinated in ginger-garlic, soy and chilli, dusted in cornflour and deep-fried fresh to order so the outside turns crisp while the meat stays juicy. The red colour comes mainly from Kashmiri chilli powder with only a trace of food colour for that familiar restaurant look. A portion is six good-sized pieces, served crisp and dry with a fiery Szechuan sauce on the side for dipping; if you would rather have them tossed in a coating sauce, ask about our Drums of Heaven variation instead. The chicken is halal-marked and bought fresh from Makro daily, the marinade and dip are made in-house by our Uttarakhand chef, and there is no pork or alcohol used, so it is halal-friendly.

The heat sits at a medium level, driven by ginger, garlic and mild red chilli rather than anything sharp, and it can be made hotter or milder on request. These are very much a hands-on, eat-by-the-bone starter, popular as something to share over drinks, and they go well with a chilli sauce or a bowl of fried rice.
