About Chilli Chicken

Chilli Chicken is probably the best-known dish in the Indo-Chinese family, a style of cooking that has nothing to do with North India and isn't quite Chinese either. It grew out of the Hakka Chinese community that settled in Kolkata generations ago, who adapted their home cooking to Indian tastes and ingredients. The result is its own hybrid cuisine, and Chilli Chicken sits right at the centre of it.

At BHARAT we make it with boneless chicken thigh, given a light coating of cornflour and egg and fried so the outside stays slightly crisp and holds the sauce. From there it goes into a hot wok and is tossed with onion, capsicum, soy and vinegar, with green chilli carrying most of the heat and a faint hint of sweetness rounding it off. The chicken is halal-marked and bought fresh from Makro each day, the sauces are made in-house by our chef from Uttarakhand, and there is no pork and no alcohol used anywhere in the cooking, so the dish is halal-friendly. Everything is cooked to order, never held in advance.

You can have it two ways. The dry version, with the sauce clinging tightly to the chicken, works as a starter to pick at; the gravy version gives you more sauce to spoon over rice as a main. It runs on the hot side of our menu, but the chilli is easy to dial up or down, so do tell the kitchen if you want it milder or fiercer. It pairs naturally with steamed rice, Hakka noodles or fried rice.
