About Garlic Chicken
Garlic Chicken is an Indo-Chinese dish, part of the hybrid cuisine the Hakka Chinese community created after settling in Kolkata and reworking Chinese cooking for Indian tastes. It is honestly neither North Indian nor authentically Chinese, but a dish in its own right within that crossover tradition, and one squarely for anyone who loves garlic.
We build it on a generous amount of garlic, used at more than one stage. Some goes into the marinade, more is toasted in the wok first so its oils come out and it turns sweet and roasted rather than sharp and raw, and a little is crisped on top for texture and aroma. The boneless chicken is lightly dusted with cornflour to protect the meat and to thicken the sauce slightly, then stir-fried in a base of dark soy until everything is coated. The chicken is halal-marked and bought fresh from Makro daily, the sauce is made in-house by our chef from Uttarakhand, and with no pork or alcohol involved the dish is halal-friendly. Every order is cooked fresh in a hot wok rather than held in advance.
The flavour is deep and aromatic, medium on heat and leaning on the roasted garlic far more than on chilli, and the spice level can be raised or lowered to taste. It comes coating the chicken as standard, but a gravy version is available too, which tastes very good spooned over a bowl of steamed rice. It also pairs well with plain noodles or a simple fried rice that lets the garlic carry the plate without competition.
