About Ginger Chicken
Ginger Chicken is part of the Indo-Chinese repertoire, the hybrid cuisine created by the Hakka Chinese who settled in Kolkata and reshaped Chinese cooking around Indian tastes. It is honestly not a North Indian dish, nor an authentic Chinese one, but it has long been a comforting fixture of this distinctive crossover style.
Our version puts ginger front and centre. Boneless chicken is marinated with ginger, soy and white pepper, then stir-fried with plenty of fresh julienned ginger and spring onion. The ginger is cooked down so its sharpness mellows into a warm, fragrant note rather than a harsh bite, and a little sugar in the soy reduction adds a faint sweetness. It comes in a light, semi-translucent sauce that just coats the meat rather than a thick gravy, and it uses very little oil. The chicken is halal-marked and bought fresh from Makro daily, the sauce is made in-house by our chef from Uttarakhand, and with no pork or alcohol used it stays halal-friendly. Each plate is cooked to order in a hot wok.
On heat it sits at the mild-to-medium end of our menu, the warmth coming from the ginger itself more than from chilli, and the spicing can be adjusted to taste. If you prefer, we can prepare it without onion and keep the focus on the ginger and chicken. It is one of the lighter dishes in this section and pairs nicely with steamed rice or plain noodles.
