About Honey Chicken
Honey Chicken comes from the Indo-Chinese tradition, the hybrid style of cooking that the Hakka Chinese community built in Kolkata by adapting Chinese dishes to Indian palates. It is neither genuinely North Indian nor authentically Chinese; it belongs to that separate crossover cuisine, and it sits on the sweeter side of it.
We make it with boneless chicken coated in cornflour batter and fried, then tossed in a wok glaze of pure honey, soy and vinegar with just a little red chilli. As the chicken cools the honey firms up slightly into a sticky coat, and it is finished with a scatter of sesame seeds and spring onion. The frying gives a crust that softens a touch under the glaze but keeps a pleasant chew. Our chicken is halal-marked and bought fresh from Makro every day, the glaze is made in-house by our chef from Uttarakhand, and there is no pork or alcohol in the dish, so it is halal-friendly. Each portion is cooked fresh to order.
This is the mild end of the menu: it is built around sweet and savoury notes rather than heat, which makes it one of our most popular choices with children, though we can add more chilli if an adult wants a little kick. There are no large vegetables in it beyond the spring onion garnish. It works well as a starter or alongside fried rice and noodles for those who prefer sweet over spicy.
