About Chicken Black Pepper
Chicken Black Pepper belongs to the Indo-Chinese tradition, the hybrid style created by the Hakka Chinese who made Kolkata their home and reworked Chinese techniques around Indian flavours. It is honestly neither authentic North Indian nor authentic Chinese, but a cuisine of its own that has become a familiar sight on menus across India and beyond.
Our version uses boneless chicken thigh, which stays tender and soaks up the sauce well. The pepper does almost all the work here: crushed black peppercorns go into the marinade and more is finished over the top, so the warmth builds gradually and lingers rather than hitting you up front. Aromatics like ginger, garlic and spring onion go into the wok as well, but you won't find large chunks of vegetable in it. Each portion is stir-fried fresh to order over a hot flame. The chicken is halal-marked, brought in daily from Makro, the sauce is prepared in-house by our Uttarakhand chef, and there is no pork or alcohol involved, keeping the dish halal-friendly.
It comes semi-dry, with just enough rich, peppery sauce to coat every piece rather than pool on the plate. On heat it sits towards the milder, more aromatic end of our menu, leaning on the depth of the pepper instead of chilli fire, though the kitchen can adjust the level on request. A plain egg fried rice is the natural partner, letting the pepper flavour stand out, but it works equally well with steamed rice or noodles.
