About Egg Bhurji

Egg bhurji is one of India's best loved street and railway-platform foods, an Indian-spiced scramble cooked fast on a hot griddle and served from carts across the north and west. Where a Western scramble stays soft and plain, bhurji is cooked a little drier and packed with onion, tomato and chilli, turning eggs into a quick, full-flavoured meal at any hour.

We cook ours the street-food way. Eggs are scrambled in a hot pan with chopped onion, tomato, green chilli, ginger and fresh coriander, broken up further as they set so the spices run right through. The masala notes come from spices ground fresh in the kitchen each morning rather than a packet, and a portion is two eggs, ready in about five minutes. The eggs are bought fresh daily from Makro. There is no milk or cheese in it, as traditional bhurji uses neither. The kitchen is halal-friendly with no pork on the premises and no alcohol in the food, and our Uttarakhand-trained chef will adjust the green chilli up or down on request.

The texture is soft but on the drier side, the flavour savoury and faintly sharp from green chilli and onion, with coriander running through it. It sits at a medium heat. This is quite distinct from our gravy-based Egg Curry and from the thicker, masala-coated Egg Masala; bhurji is loose and scrambled rather than saucy.

Serve it hot with soft pav bread rolls, the classic pairing, or with paratha or chapati. Although it began as a breakfast dish, it makes an easy, filling lunch or dinner just as well.
