About Steamed Rice
Steamed rice is the plainest and most versatile side in any Indian kitchen, the neutral base against which spiced dishes are eaten. BHARAT uses aged Punjabi basmati and cooks it by the absorption method with salt and a few drops of oil, so the grains stay long and separate rather than sticking together, an effect that comes from rice that has been aged at least twelve months.
There are no whole spices and nothing to compete with the food it accompanies; it is kept deliberately simple and fragrant. The rice is naturally vegan and gluten-free. It is steamed in small batches through service so it stays fresh and warm rather than sitting for long periods. A single portion suits one to two diners depending on what else is ordered, and it is the default partner for any of the gravies and dals on the menu.
