About Veg Cutlet

The veg cutlet is one of the most familiar everyday snacks in India, a shallow-fried disc of spiced mashed vegetables that turns up everywhere from tea stalls to home kitchens. It is simple, comforting food, and it works as an easy starter for diners who want something mild, crisp and meat-free rather than a heavy tandoori plate.

We make ours from boiled potato, carrot and peas with chopped onion, bound together with bread crumbs and a Punjabi spice blend that we grind fresh each day. The mixture is shaped into discs and shallow-fried until the outside turns crisp and golden while the inside stays soft. The bread crumbs give the cutlet its light, crunchy coating and help hold the shape in the pan. Each portion is two cutlets.

The flavour is mild, with just a gentle kick from green chilli and ginger, so it suits most palates including children. The vegetables keep a little of their own sweetness, and the spices stay in the background rather than taking over. The texture is the main draw: a crisp outer crust giving way to a soft, lightly spiced vegetable centre. Because we use bread crumbs in the coating, the dish does contain gluten.

It can be made vegan on request if prepared without ghee, so let your server know. Our kitchen is fully vegetarian and halal-friendly, with no pork used anywhere, and our head chef is from Uttarakhand.
