About Aloo Matar
Aloo Matar is everyday Punjabi comfort food, a gentle curry of aloo (potato) and matar (green peas) that many North Indian households cook a couple of evenings a week without a second thought. It is mild and familiar rather than showy, with a thinner, slightly soupy tomato-onion gravy that is meant for spooning rather than the thick clinging sauce of our richer curries.
The potatoes are cut into cubes and the peas added so they stay sweet and plump, all prepped from the day's fresh Makro produce. A simple base of onion, garlic and tomato is softened and seasoned with turmeric, cumin and ground coriander, the spices ground fresh in our kitchen each day rather than taken from a pre-made paste. There is nothing aggressive about the seasoning; this is a mild, homestyle dish by design, which is part of why it travels so well with children and anyone who likes their food gently spiced. Our Uttarakhand-trained chef will of course lift the heat for those who want it.
It eats soft and soothing: tender potato, sweet bursting peas and a light, tangy gravy tinted gold with turmeric. Because the sauce is on the thinner side it loves rice, soaking into plain steamed basmati or jeera rice, but it is equally happy mopped up with roti or paratha. Ghee is used in the standard version, though as a halal-friendly vegetarian kitchen with no pork we can prepare it in oil and leave out dairy for a vegan order. Quiet and dependable, it is the sort of plate that rounds out a larger spread or stands as an easy, fuss-free main on its own.
