About Chicken Clear Soup
Chicken Clear Soup is a clean, transparent chicken broth: bone-stock simmered and strained, carrying shredded boiled chicken, sliced spring onion, and white pepper, with no cornflour thickener. It reads as the Indo-Chinese counterpart to a Western chicken consommé, since this part of our menu draws on the Hakka Chinese cooking of Kolkata that adapted Chinese soups for Indian palates, so it is honestly neither strictly Chinese nor North Indian. At BHARAT in Huai Khwang we make it fresh to order with halal-marked chicken from Makro, the stock infused during boiling with fresh ginger, garlic, and cilantro roots to give a subtle fragrance before it is strained light and clear. The defining quality is that clarity and restraint: unlike the dark, thick Chicken Manchow or the tangy, thickened hot-and-sour, nothing weighs this broth down, and unlike the egg-white-softened Long Fong it stays plainly clean with the chicken and aromatics on show. That makes it a good, easy-to-digest starter before a heavier main, or a comforting bowl on its own. The kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand keeps the seasoning spare so the stock itself carries the dish. It is served mild, with chopped green chilli in vinegar or extra black pepper offered on the side, and noodles can be added on request.
