Cream of Tomato is the one Continental soup on this section, and we say that plainly: it is neither Indo-Chinese nor North Indian but the familiar European-style creamed tomato soup. At BHARAT in Huai Khwang we make it fresh to order, starting with Roma tomatoes roasted whole until their skins blister, then peeled and blended with vegetable stock, fresh cream, and a little fresh basil. The roasting step is the point of difference, concentrating and slightly sweetening the tomato before any cream goes in, which is why the finished bowl tastes of ripe fruit rather than tinned paste. It arrives smooth and mildly sweet-savoury, topped with two croutons for texture, and its bright red colour comes only from the tomatoes themselves, with nothing artificial added. This is the gentle, non-spicy option, and it sits apart from everything else here: no soy, no vinegar, no chilli heat, no crispy noodles, and none of the clear broths of the rest of the list. It suits children and anyone who would rather skip spice altogether. The tomatoes and cream are bought fresh from Makro, and the kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand keeps it very mild as standard. A dairy-free version can be prepared on request by leaving out the cream or using a plant-based alternative.
