About Veg Clear Soup
Veg Clear Soup is the lightest item in our soup section: vegetable stock with finely cut carrot, cabbage, and beans, seasoned only with salt, black pepper, spring onion, and a very small amount of light soy so the broth stays transparent rather than dark. It belongs to the Indo-Chinese tradition, the cooking the Hakka Chinese of Kolkata developed by adapting Chinese soups for Indian taste, so it is honestly neither authentic Chinese nor North Indian. At BHARAT in Huai Khwang we make it fresh to order, with the vegetables bought from Makro and blanched briefly in the hot broth so they keep a little crunch and their bright colour. What sets it apart is exactly how little is done to it.
Unlike our plain Veg Soup it carries no extra body at all, and unlike the Manchow or hot-and-sour there is no cornflour thickening, no vinegar tang, and no fried-noodle topping; it is simply a clean, restorative broth. That makes it a good opener for diners who want something gentle before a heavy main. The kitchen is halal-friendly with no pork and no alcohol. Our Uttarakhand-born head chef Santosh Shah keeps the seasoning deliberately spare so the vegetables speak for themselves. It is mild by nature, and crushed black pepper or fresh green chilli can be added if you want more edge.
