About Veg Manchow Soup

Veg Manchow is a thick, dark, savoury soup and one of the most recognisable plates in Indo-Chinese cooking. It is not authentic Chinese and not North Indian; it was built in Indian Chinese restaurants from the 1970s, loosely adapting the sour-hot soups of the Sichuan repertoire to suit Indian taste. At BHARAT in Huai Khwang we make it fresh to order with finely chopped carrot, cabbage, capsicum, and spring onion cooked over a hot flame with plenty of garlic and ginger, finished with soy and a cornflour slurry that gives it body. The signature is the colour and the crunch: a deep brown broth, glossy and spicy, crowned with a handful of crisp deep-fried noodles that you stir in as you eat. That fried-noodle topping is what separates it from every other soup on our menu. It is not the vinegar-led tang of the hot-and-sour, nor the thin clarity of the clear soups, nor a dumpling broth. The vegetables are bought fresh from Makro and chopped the same day, and the kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand balances the garlic, soy, and chilli so the heat sits at a comfortable medium, and the spice can be turned up or down to suit you. It eats as a meal in itself.
