About Chicken Fried Rice
Chicken Fried Rice is one of the everyday staples of Indo-Chinese cooking, the hybrid cuisine the Hakka Chinese community created in Kolkata by reshaping Chinese dishes around Indian tastes. It is neither authentic North Indian nor truly Chinese, but a familiar crossover dish found on menus all over India.
We make ours with small, tender dices of boneless chicken stir-fried over a high flame with rice, scrambled egg, diced onion, spring onion and vegetables such as carrot and french beans. The rice is cooled before it hits the wok so the grains stay separate and toss freely rather than clumping together. It is seasoned mainly with soy and pepper, which keeps it savoury and mild. Our chicken is halal-marked and bought fresh from Makro daily, and with no pork or alcohol used the dish is halal-friendly. The egg is traditional here, but if you would rather skip it just tell your server and the chef will leave it out. Everything is cooked fresh to order.
This is a mild dish with no real heat, which makes it a good base alongside spicier plates from the rest of the menu. It stands on its own as a light meal, but it also works as the partner to a saucy starter like Chilli Chicken or Manchurian, where the plain savoury rice soaks up the gravy. If you want more heat in the rice itself, look at our Schezwan or burnt garlic versions instead.
