Frequently Asked Questions
Is the rice used for this dish basmati or a different grain?
We typically use long-grain rice, specifically cooked and cooled to ensure the grains remain separate and firm when stir-fried.
Are there green peas in the Veg Fried Rice?
Depending on the season, we may include sweet green peas alongside the standard chopped carrots and beans.
Is the dish spicy?
No, Veg Fried Rice is very mild, making it an excellent base to soak up the sauces from dishes like Veg Manchurian or Paneer Chilli.
Can I have this prepared without soy sauce?
Yes, we can prepare a'white' fried rice seasoned only with salt, pepper, and aromatics if you prefer.
Does it contain any garlic or onion?
Yes, spring onions and a small amount of garlic are used for flavoring. Jain options(no onion, no garlic) are available upon request.

About Veg Fried Rice
Veg Fried Rice is the mild, foundational plate of the Indo-Chinese rice section. Like the rest of this cuisine, it is a hybrid rather than the real thing on either side: the Hakka Chinese community in India took Chinese fried-rice technique and reworked it for the local palate, and the result became its own established style, neither authentically Chinese nor North Indian. At BHARAT in Huai Khwang we cook long-grain basmati rice al dente, then cool it so the grains stay separate and firm before they hit the wok. From there it is tossed with diced carrot, bean, cabbage, and spring onion in light soy and white pepper, and depending on the season we may add sweet green peas. The wok is run hot enough that the rice takes on the faint smoky note Indian Chinese kitchens call wok hei. There is no egg in this version at all. The soy is made in-house and the kitchen is halal-friendly with no pork. This is deliberately the gentlest rice we make, which is the whole idea: it is built to be a base that soaks up the sauces from bolder dishes like Veg Manchurian or Paneer Chilli rather than to compete with them. If you want it plainer still, we can make a white fried rice seasoned only with salt, pepper, and aromatics and leave out the soy. A small amount of garlic and spring onion goes in for flavour, but a Jain version with no onion and no garlic is available on request. Eat it as a main alongside any gravy, or as a quiet partner to a spicier plate.
