About Chicken Hot & Sour Soup

Chicken Hot & Sour is the chicken version of our hot-and-sour soup, a thickened broth that sets sharp heat against a clear tang. Like most of this section it is Indo-Chinese, the style the Hakka Chinese of Kolkata built by reshaping Chinese soups for Indian palates, so it is honestly heavier and milder than the Sichuan original rather than an authentic Chinese soup. At BHARAT in Huai Khwang we make it fresh to order using halal-marked chicken from Makro, boiled and shredded, with julienned carrot and cabbage in a chicken-stock base thickened with cornflour. The sourness comes from rice vinegar and the heat from white pepper, and whisked egg is swirled in to leave fine ribbons through the broth, with sliced spring onion over the top. What marks it out from its kitchen-mates is that vinegar-and-pepper balance in a thick body: there is no dark soy colour or crispy-noodle garnish as in the Chicken Manchow, and it is far bolder than the mild, clear chicken soups. The vegetables are fresh from Makro, and the kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand keeps the sour and the hot in balance so neither runs away. It is one of our spicier bowls as served, and the chilli and pepper can be adjusted to your taste.
