About Chicken Long Fong Soup

Chicken Long Fong is a gentle, delicate chicken soup. The name means dragon-phoenix, and in Indo-Chinese kitchens it signals a soothing, restorative bowl rather than one of the spiced soups on the rest of the menu. This is the hybrid Indian-Chinese cooking developed by the Hakka Chinese of Kolkata from Chinese roots, so it is neither authentically Chinese nor North Indian. At BHARAT in Huai Khwang we make it fresh to order with halal-marked chicken from Makro, shredded fine, in a light chicken stock with sliced mushroom and spring onion. Its pale, slightly silky character comes from whisked egg white and a little cornstarch blended into the broth rather than from any cream or milk, which keeps it dairy-free yet smooth on the palate. Among our chicken soups this is the calm one: where the Manchow is dark and the hot-and-sour is tangy and fiery, Long Fong is built to be mild and easy, seasoned lightly with salt, white pepper, and a touch of sesame oil. It sits apart even from the plain chicken clear soup through its egg-white softness and mushroom note. The kitchen is halal-friendly with no pork and no alcohol, and the vegetables are fresh from Makro.
