About Chicken Manchow Soup
Chicken Manchow is a thick, dark, spicy soup, the chicken counterpart to our vegetarian Manchow. It is Indo-Chinese rather than authentic Chinese or North Indian, a dish put together in Indian Chinese kitchens from the 1970s that loosely adapted the hot-sour soups of Sichuan to Indian taste. At BHARAT in Huai Khwang we make it fresh to order. We use halal-marked chicken bought from Makro the same day, finely minced so it blends through the soup alongside chopped vegetables, cooked into a dark garlic-and-soy broth thickened with cornflour and finished with delicate egg drops for texture. The colour and the topping are the giveaways: a glossy brown broth crowned with crisp deep-fried noodles that go on top or to the side so they hold their crunch until you stir them in.
That fried-noodle finish and the dark soy depth separate it from the vinegar-led chicken hot-and-sour and from the pale, gentle Long Fong. The kitchen is halal-friendly with no pork and no alcohol, and the vegetables are fresh from Makro. Our Uttarakhand-born head chef Santosh Shah balances the garlic, soy, ginger, and green chilli so the heat lands at a comfortable medium with a clear savoury backbone. The spice can be raised or softened to suit you, and the soup is substantial enough to eat as a small meal in itself.
