About Chicken Triple Fried Rice
Chicken Triple Fried Rice is an Indo-Chinese dish, part of the hybrid cuisine the Hakka Chinese community of Kolkata developed by adapting Chinese cooking to Indian flavours. It is neither authentic North Indian nor truly Chinese, but a generous crossover plate, and easily the heaviest item in our rice section.
The 'triple' refers to three components served together: spiced fried rice, stir-fried noodles, and a rich chicken gravy. The rice carries diced chicken while the gravy is made with savoury fried minced chicken dumplings, and rather than mixing it through we bring the thick, spicy gravy in a separate bowl so you can pour as much as you like over the rice and noodles yourself. All three parts lean on our house-made Schezwan sauce, prepared in-house by our chef from Uttarakhand from soaked dried red chillies and garlic, which gives the whole dish a solid, spicy heat that runs right through it. The chicken is halal-marked and bought fresh from Makro daily, and with no pork or alcohol used anywhere it stays halal-friendly. Everything is cooked fresh to order in a hot wok.
This is a deliberately big, loud dish that runs spicy throughout, and the kitchen can ease the heat if you ask for it milder. Because it combines rice, noodles and a bowl of gravy in a single order it is very filling and is often shared between two people rather than eaten alone. It pairs well with a cold drink, and a lighter starter beforehand keeps the overall meal from feeling too heavy.
