About Mix Veg

Mix Veg is the North Indian kitchen's answer to using the best of the day's produce in one pan. Carrot, green beans, cauliflower, peas and capsicum are cut and cooked together so that the dish becomes a survey of textures rather than a single hero vegetable. It is semi-dry rather than swimming in gravy, with the spices clinging to the vegetables and only a thin onion-tomato base to bind them, which keeps it lighter than our cream-based curries.

Everything is bought fresh from Makro and prepped the same day, and the cooking is staged by timing: the firmer vegetables like carrot and beans go in first, the quicker cauliflower, peas and capsicum follow, so each one finishes with its own bite instead of collapsing into mush. The seasoning is straightforward Punjabi: ginger-garlic, turmeric and ground coriander, with the masala ground fresh in our kitchen each day. There is no paneer or nuts here; the focus stays squarely on the vegetables. Because it is essentially stir-fried, the spice level is easy to customise, and our Uttarakhand-trained chef will take it milder or hotter as you prefer.

The eating is fresh and varied, sweet carrot against grassy beans, soft cauliflower against the slight snap of capsicum, all lightly coated in warm, savoury spice. Ghee features in the standard version, but as a halal-friendly vegetarian kitchen with no pork we can cook it in oil and leave out dairy for a vegan order. It is a fibre-rich, balanced choice that rounds out a thali well, sitting beside a dal or a richer gravy. Serve it with roti, paratha or plain rice; its lighter profile makes it an easy everyday option rather than a once-in-a-while indulgence.
