About Paneer Kulcha
Paneer kulcha is the cheese-stuffed kulcha, a leavened refined-flour (maida) bread baked in the tandoor rather than a whole-wheat paratha. The dough is filled with grated paneer mixed with chopped onion, green chilli and fresh coriander; the spices are ground fresh in our kitchen. The paneer is set in-house each morning rather than coming from a vacuum-packed block, which is why it stays soft inside the bread instead of turning rubbery. At BHARAT each kulcha is made fresh to order and baked against the wall of our charcoal tandoor at around 480°C, so the outside crisps and blisters with a faint smoke while the filling stays moist. Ghee or butter is brushed over the top, oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. The filling is spiced mildly to moderately so the flavour of the fresh cheese comes through. What sets it apart from the aloo or onion kulchas is that soft paneer centre, which also makes it filling enough to serve as a light meal on its own. It is good with chole or a gravy on the side. The kitchen is led by a chef from Uttarakhand.
