About Aloo Kulcha
Aloo kulcha is the potato-stuffed kulcha, a leavened refined-flour (maida) bread rather than a whole-wheat paratha, and it is baked rather than griddled. This is the Amritsari style, from Amritsar in Punjab. The dough is filled with spiced mashed potato seasoned with cumin, green chilli, fresh coriander and dried mango powder (amchur), the amchur giving the filling its characteristic tang; the masalas are ground fresh in our kitchen. At BHARAT each kulcha is made fresh to order and pressed onto the inner wall of our charcoal tandoor, which runs at around 480°C, so it comes out with a crisp, blistered crust and a smoke note while staying soft within. Ghee or butter is brushed over it, oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. It carries a medium spice level from the green chilli and dry spices. What sets it apart from the stuffed kulcha, which can mix its fillings, is that this one stays squarely with the spiced potato. It is a popular heavy breakfast, traditionally eaten with chole or chana masala, with plain yogurt and pickle alongside. The kitchen is led by a chef from Uttarakhand.
