About Butter Naan

Butter naan is our plain naan with butter added the moment it leaves the oven. The dough is maida — refined white flour — leavened with yogurt and a little baking powder so it bakes soft and puffed, quite different from the leaner whole-wheat rotis. It is rolled out and slapped by hand onto the inside wall of our real charcoal tandoor at around 480°C, gripping the clay and baking in about ninety seconds, with brown spots on top and a light char where it held to the wall. As it comes off, it is brushed generously with melted butter — about 25 grams per piece — which sits on the surface rather than soaking all the way through, giving the bread a glossy top and a richer flavour than the plain version. Ghee can be used instead of butter if you ask. It is halal-friendly with no pork. The added butter makes it a touch heavier and very satisfying alongside robust curries; it is best eaten hot and fresh from the tandoor. If you prefer it lighter, simply order the plain naan.
