About Cheese Paratha
Cheese paratha is a stuffed whole-wheat bread aimed at anyone who wants something rich and mild. The atta dough is filled with grated cheese mixed with chopped onion and green chilli; the spices are ground fresh in our kitchen. Unlike the paneer paratha, which uses the fresh cheese we set in-house, this one is made with grated processed cheese, which melts during the cook and stays soft and gooey inside the bread rather than holding its shape. At BHARAT each paratha is rolled and cooked to order on the tawa griddle, where ghee or butter is worked into both sides until crisp; oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. One paratha is a portion. It is the mildest of the stuffed breads, leaning on the savoury richness of the cheese rather than on heat, which is why it suits children and anyone who would rather skip spice. The melting cheese centre is what sets it apart from the potato, cauliflower and onion versions. It is good with a spoon of yogurt and a little pickle, or as the bread alongside a robust curry.
