About Garlic Naan

Garlic naan is our soft white-flour naan worked through with garlic. The dough is maida — refined flour — leavened with yogurt and baking powder so it bakes light and puffed. Before it goes into the oven, finely chopped fresh garlic and fresh coriander are pressed into the wet surface so they bake right into the bread. It is then slapped by hand onto the inside wall of our real charcoal tandoor at around 480°C and cooks in roughly ninety seconds, picking up the usual brown contact spots on top and a light char where the dough gripped the clay. As it comes off the wall it is brushed with garlic butter at the pass, which lifts the aroma further. The baking mellows the raw bite of the garlic into a rounder, savoury fragrance rather than a sharp one, and the coriander adds a fresh green note. Ghee can stand in for butter on request, and the bread is halal-friendly with no pork. It is one of our most popular breads and goes with almost any gravy on the menu.
