It is full-fat dairy milk, served either hot or cold to your preference, and it is the very same milk the kitchen uses every morning to set our yogurt and press our paneer — so it is fresh, good-quality dairy rather than an afterthought.
Cold, it is the drink we most often recommend to anyone — particularly children — who has bitten into something spicier than expected. Dairy contains casein, which binds to the chilli compound capsaicin and washes it away, which is why a glass of milk calms a burning mouth when water only spreads the heat around. For families dining with young children, or for guests new to Indian food who want a safety net beside a fiery curry, it is genuinely the most useful thing on the drinks list.
