About Mushroom Clear Soup
Mushroom Clear Soup is sliced mushroom simmered in vegetable stock with black pepper, garlic, and a splash of soy, kept clear rather than thickened. It belongs to the Indo-Chinese style of cooking, the soups the Hakka Chinese of Kolkata reworked from Chinese originals to suit Indian palates, so it is honestly neither authentic Chinese nor North Indian. At BHARAT in Huai Khwang we make it fresh to order. As the mushroom cooks it gives up its own water into the broth, which deepens the savoury, earthy flavour without needing heavy seasoning, so the bowl tastes fuller than its short ingredient list suggests. The thing to know is that this is a light, clear soup and not a creamed mushroom one: there is no dairy, no cream, and no cornflour thickener anywhere in it, which sets it apart from the thick Western-style cream of mushroom many people expect. Within our own list it is the mushroom-led member of the clear soups, distinct from the vegetable clear soup by that dedicated earthy depth. The mushrooms and aromatics are bought fresh from Makro, and the kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand keeps the seasoning restrained so the mushroom stays the focus. It is mild as standard, and boiled noodles can be added on the side to make it heartier.
