About Onion Kulcha
Onion kulcha is the onion-stuffed version of the tandoor-baked kulcha, a leavened refined-flour (maida) bread rather than a whole-wheat paratha. The dough is filled with finely chopped onion mixed with ajwain (carom seeds) and salt, with green chilli for a moderate kick; the spices are ground fresh in our kitchen. The onion goes in raw and crisps and softens inside the bread as it bakes. At BHARAT each kulcha is made fresh to order and pressed against the wall of our charcoal tandoor, which runs at around 480°C, so the crust blisters and chars in patches and picks up a faint smoke while the inside stays soft and steamy from the onion. Ghee or butter is brushed over the top, oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. The tandoor and the leavening give it a lighter, crisper finish than a griddled stuffed paratha. What sets it apart from the aloo or paneer kulchas is its sharper, more savoury onion character rather than soft potato or cheese. It pairs well with chole, chana masala or a rich lentil dish like dal makhani. Our kitchen is led by a chef from Uttarakhand.
