It is neither authentically Chinese nor North Indian, just a popular part of that fusion, and it is one of the milder, more crowd-friendly options on the menu. At BHARAT in Huai Khwang the paneer is set fresh in our kitchen every day rather than vacuum-packed, which is why the cubes hold their shape and stay soft instead of turning rubbery in the wok. We toss them with cooled basmati rice, onion, capsicum, and spring onion in light soy, and lightly sear the paneer edges in the wok while keeping the inside fresh and tender. We also add finely chopped carrot, beans, and spring onion alongside the paneer. The paneer is left fairly plain on purpose, so it absorbs the soy, garlic, and vegetable flavours during the tossing rather than fighting them.
