About Plain Naan

Naan is a leavened tandoor bread, and where roti uses whole wheat, naan is made from maida — refined white flour. Our dough is softened and lifted with yogurt and a little baking powder, which is why the finished bread is fluffier and more pillowy than any roti, and also why it is not dairy-free. It is rolled out, then slapped by hand onto the inside wall of our real charcoal tandoor at around 480°C, where it grips the clay and bakes in roughly ninety seconds, puffing as it cooks. The signs of the oven are clear: random brown spots across the top from the hot clay and a light char along the bottom edge where the dough held to the wall. Nothing is brushed on the plain naan and there is no filling — it is the simplest, most versatile bread we make. It is halal-friendly with no pork. Soft and a little chewy, it is the standard match for any of our gravies and is especially good with creamy dishes like butter chicken or dal makhani.
