About Stuffed Naan
Stuffed naan turns the soft tandoor bread into a filled one. The dough is maida — refined white flour — leavened so it bakes light, and it is wrapped around a savoury filling of mashed potato, onion, green chilli, and fresh coriander before being sealed and gently flattened. It is then slapped by hand onto the inside wall of our real charcoal tandoor at around 480°C, where it grips the clay and bakes in about ninety seconds. The outside picks up brown contact spots and a light char while the filling stays soft and moist inside. The stuffing carries a mild to moderate warmth from the green chilli, well-seasoned enough that the bread eats well on its own or with a little yogurt, though it is just as good torn into a gravy. It is usually brushed with butter, or with ghee if you prefer, as it leaves the oven. One stuffed naan comes per portion and is meant to be eaten whole. It is halal-friendly with no pork and, with its potato filling, makes a more substantial bread than a plain or butter naan.
