About Sweet Lassi

Sweet lassi is the drink Punjab is most famous for, and for many North Indian families it is less a beverage than a small ritual — a tall, frothy glass of sweetened yogurt that closes a heavy meal or carries you through a hot afternoon. The dish goes back centuries to the dairy-rich villages of Punjab, where churning fresh curd with sugar was the simplest way to turn a glut of milk into something cooling and filling. It remains one of the few "desserts" you drink rather than eat.

At BHARAT in Huai Khwang we make ours from the same whole-milk yogurt the kitchen sets in-house every morning — the curd we also use for our raita and our paneer. It is hand-whisked thick with sugar and a small pinch of green cardamom until a light foam forms on top, then served chilled in a roughly 300ml glass. We do not thin it down with water or stretch it with ice the way many places do; the body should be rich enough that the drink coats the glass. Each one is blended fresh per order in the bar, never poured from a pre-mixed batch.

Where salted lassi is a savoury digestive and mango lassi leans toward a fruit smoothie, sweet lassi sits in the middle — gently sweet, fragrant with cardamom, and built to tame chilli heat. The cool dairy is a natural foil for our spicier curries and for a plate of biryani, which is why so many regulars order it alongside the food rather than after it. Vegetarian, made without any artificial flavouring, and a favourite with children and first-time diners who want something familiar and soothing.
