A simple vegetable soup of carrot, cabbage, beans, and corn simmered in vegetable stock with crushed black pepper and a small splash of soy, served with a vinegar-and-green-chilli condiment on the side. Despite the Chinese feel, this belongs to the Indo-Chinese family rather than to any authentic Chinese kitchen. That style was created by the Hakka Chinese community of Kolkata, who reworked Chinese soups to suit Indian palates, and it is neither truly Chinese nor North Indian but its own hybrid. At BHARAT in Huai Khwang we make it fresh to order, never from a batch left standing. The vegetables come from Makro, chopped fine on the day, and the kitchen is halal-friendly with no pork and no alcohol anywhere in the recipe. Of all our soups this is the plain, all-purpose one: lighter than Manchow, without the dark soy colour or the crispy noodle topping, and without the vinegar sharpness of the hot-and-sour. It is left in a light, clear style and is not thickened with cornflour, so it reads as a gentle broth carrying the natural taste of the vegetables. Our chef from Uttarakhand keeps the seasoning restrained on purpose. It is mild as it leaves the kitchen, and the spice can be lifted with extra pepper or fresh green chilli if you ask.
