About Veg Wonton Soup

Veg Wonton Soup is a clear vegetable broth carrying soft, hand-folded vegetable dumplings and finely sliced spring onion. It sits in the Indo-Chinese part of our menu, the style the Hakka Chinese community of Kolkata created by adapting Chinese cooking to Indian palates, so while the wonton itself is Chinese in origin, this bowl as served is an Indian-Chinese hybrid rather than an authentic Chinese soup. At BHARAT in Huai Khwang we make it fresh to order. The filling is grated carrot, cabbage, and bean sprout bound with a sesame-oil dressing, wrapped in thin flour wrappers and steamed soft so they stay tender against the delicate broth. The dumplings are what define it: this is the only vegetable soup on the list built around wontons, which sets it clearly apart from the dark, fried-noodle-topped Manchow and from the thickened, vinegar-sharp hot-and-sour. It stays on the lighter, milder side of the section. The vegetables are bought fresh from Makro, and the kitchen is halal-friendly with no pork and no alcohol. Our chef from Uttarakhand keeps the broth mild and savoury so it does not overpower the filling. The warm broth with the stuffed wontons makes it filling enough to stand as a light meal on its own, and chilli oil can be added on the side if you would like some heat.
