About Water
A chilled bottle of drinking water — still and clean, served from the bar. It may be the simplest thing on the menu, but it matters: water is the steady companion to a North Indian meal, keeping you comfortable through the spice and cleansing the palate between courses. We are always happy to keep the table topped up, and it is the sensible base alongside any of our hotter dishes. For diners who want to cool genuine chilli heat, though, a glass of cold milk, a lassi or a salted chaas actually works better than water, since dairy carries away the heat that water only spreads around.
