About Paneer Paratha
Paneer paratha is a stuffed whole-wheat bread built around fresh cheese. The atta dough is filled with crumbled paneer that we set in-house every morning, mixed with roasted cumin, finely diced onion, green chilli and fresh coriander; the spices are ground fresh in our kitchen. Because the paneer is made on the premises rather than coming from a vacuum-packed block, it stays soft and moist inside the bread, and it is pressed of excess whey first so the filling stays dry enough for the dough to be rolled out without tearing or turning soggy. At BHARAT each paratha is rolled and cooked to order on the tawa griddle, where ghee or butter is worked into both sides until they colour in golden patches. Oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. One paratha is a portion. What distinguishes it from the aloo or gobhi versions is its savoury cheese centre rather than potato or cauliflower, which gives it more protein and a mild, creamy character carrying gentle warmth from the spices. It is good with a cool yogurt or mint chutney on the side, or simply on its own. Our kitchen is led by a chef from Uttarakhand.
