About Aloo Paratha

Aloo paratha is the best known of the stuffed parathas and a classic Punjabi breakfast. The shell is whole-wheat atta dough, and the filling is spiced mashed potato seasoned with cumin, green chilli, fresh coriander and salt; the masalas are ground fresh in our kitchen. Stuffing a paratha takes some care, because the potato has to be packed in and then rolled out flat without the dough tearing, so the potatoes are boiled and mashed smooth before they go in. At BHARAT each paratha is rolled and cooked to order on the tawa griddle, where ghee or butter is worked into both sides until golden patches form. You can ask for oil instead, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. One paratha makes a portion, roughly twenty centimetres across, and the spiced potato makes it substantial enough to eat on its own. What sets it apart from the other stuffed parathas is that soft, comforting potato centre rather than cheese, cauliflower or onion. It is traditionally eaten with fresh curd, a dab of white butter and a tangy pickle, and that is still the way we would suggest serving it. The kitchen is led by a chef from Uttarakhand.
