About Onion Paratha
Onion paratha is a stuffed whole-wheat bread built around onion. The atta dough is filled with finely chopped onion mixed with ajwain (carom seeds), salt and green chilli; the spices are ground fresh in our kitchen. Onion is the trickiest of the fillings to work with, because it gives up water as the bread is rolled, so the dough is dusted with extra flour to absorb the moisture and keep it from tearing. At BHARAT each one is rolled and cooked to order on the tawa griddle, where ghee or butter is worked into both sides until crisp; oil is available on request, and as a vegetarian bread it is prepared without pork in a halal-friendly kitchen. The onion goes in raw and softens in the heat of the cook, taking on a faint sweetness that balances the savoury, lightly spiced seasoning. That gentle sweetness is what sets it apart from the aloo or gobhi parathas, where potato and cauliflower keep things earthier. The finely chopped filling is pressed firmly into the dough, though a little may peek through, which is part of its rustic character. It is good dipped into a dal or simply with a cup of masala tea. The kitchen is led by a chef from Uttarakhand.
